It’s time for another Meal Plan Monday! Normally I have my boys help pick the meals for the week, but since we were out of town this weekend, I’m picking them myself. Hopefully, they will eat everything!
My plan for future Meal Plan Monday posts is to include a recipe each week. Since we were out of town this weekend, and I was trying to get the house clean before we left, that didn’t happen. Hopefully, it will happen next week! Since I haven’t had a chance to ask the boys what they would like (or gone grocery shopping) we are going to be working with what we have for a few days!
This weekend we drove to Tennessee to see my sister graduate with her Bachelor’s degree. We had a blast but definitely didn’t have enough time to do everything we wanted to do. We kept getting stuck in traffic during our drive down, so we didn’t get in until 8:30 pm on Friday night. We had dinner reservations, at Ruth’s Chris, so we ended up having my sister meet us there so we didn’t have to push them back any later. After dinner, we headed straight to the hotel because her graduation was at 8 am. Thankfully we didn’t have to be up as early as she did, but it was still pretty early! We ended up getting stuck in traffic and I thought we were going to miss her graduation. We did not drive 7 hours to miss her graduate! We ended up parking about 15 minutes away and it was not fun to walk up and down all the hills in high heel boots! I really should have thought that through better.
Even though it had been raining all week, the rain held off during the graduation ceremony. After it was over we all met at The Hot Tin Roof 2 for lunch. I got the pulled pork quesadilla and it was delicious! I only ate a little bit, though, because I had filled up on fried pickle chips. After lunch was over, we headed back to our hotel to change clothes and then headed over to the hotel my sister was staying at. We hung out by the pool for a little bit and had a few drinks before heading back to our hotel. We were meeting an hour later, downtown, and we wanted to take an Uber from our hotel.
We met at a bar and had dinner before we started our night. Clint and I split a pulled pork sandwich and I really wish I had just eaten a whole one myself because it was that good! I’m going to be honest when I say that I don’t remember much of what happened after that because I may have had a drink or 10 too many. What I do remember is we went to a few different bars, I drank some jalapeno moonshine (I DON’T recommend it), broke a nail, and ended up dancing on the bar at Coyote Ugly. And Clint got video proof of that, but I’m scared to watch it. I also know that I was pretty hungover during our drive home on Sunday, which made that extra fun.
Something I did take away from our trip is that it’s time for me to start making ribs and pulled pork more! Which is why I am adding them to this week’s meal plan! So, without further ado, this is what we will be eating this week.
May 8 – May 14 Meal Plan
- Monday: Waffles, bacon, and eggs because I have the stuff here and won’t have to run to the store
- Tuesday: Taco salad
- Wednesday: Crockpot beer chicken with salad and crescent rolls
- Thursday: Leftovers or fend for yourself
- Friday: Crockpot barbecue pork chops with corn and green beans
- Saturday: Barbecue ribs with corn salad and potato salad
- Sunday: BLT quesadillas
Now that the weather is getting warmer, we’ll probably be adding a lot of grilling recipes to our menu! What’s on your menu for this week?
